Last night, we didn’t do much to celebrate New Year. I love to cook, so we celebrated with a simple dinner of Creamy Chicken Noodle Soup Casserole followed by a midnight dessert of New Year’s Punch and this Brownie Bottom Butter Cake. I couldn’t locate the recipe I’d found, so I came up with one of my own.
Brownie Bottom Butter Cake
Preheat oven to 350*. Line an 8×4 loaf pan with foil and spray with cooking spray.
- 3/4 cup chocolate chips
- 1/4 cup butter
- 1/2 tsp vanilla
- 1/3 cup brown sugar
- 1 egg
- 1/3 cup flour
- 1/4 tsp baking powder
- pinch of salt
In double boiler, melt chocolate and butter together. Remove from heat. Stir in vanilla. Cool slightly. Beat in brown sugar until creamy. Beat in egg. Slowly whisk in flour, baking powder, and salt.
Pour brownie batter into prepared pan. Spread evenly, then tap down to ensure there are no air bubbles. Bake for 15 minutes. Prepare butter cake batter while brownie bottom bakes.
Butter Cake layer
- 1/2 cup butter, softened
- 1/2 cup sugar
- 2 eggs
- 1/4 cup milk
- 1 cup flour
- 1/2 tsp baking powder
Cream together butter and sugar. Beat in eggs. Add milk. Stir in flour and baking powder.
Pour butter cake batter on top of hot brownie layer. This will ensure the batter melts into the brownie and reduce the chance of separation.
Bake for 35 to 45 minutes, or until cake tester inserted in center comes out clean. The top should be a beautiful golden brown. Cool completely.
Lift by foil out of pan and transfer to a plate or cutting board. Slice just like a loaf of bread or a Sara Lee pound cake.
*I think that next time I will dust the slices with powdered sugar when I serve them.
We had a quiet, untraditional New Year this year. We missed the ball drop, and almost missed midnight. I did manage to steal a kiss from the hubby just as the clock struck twelve. Today, we’re just having an easy day of game playing and relaxation. The husband goes back to work tomorrow. I was just getting used to having him home again. It’s been a great week and a half, but all good things must come to an end.
2016 was a crazy, unconventional year to say the least. I’ve heard that how you ring in the new year is how you will spend the new year. 2016 came in with heartache and pain. It was a hard beginning to a hard year.
I rang in 2017 with a kiss from my love and surrounded by those who matter most to me. I fed my family delicious treats and thus far had a relaxing first day of the year with them. We are happy and healthy. Sounds like the perfect way to spend the year.
