- 1 beef roast
- 1/2 stick butter
- 1 large onion, sliced into rings
- 1-2 cloves garlic, minced
- 1 large red and 1 large green pepper, sliced into rings
- Salt and pepper, to taste
- 2-3 au jus gravy packets
- Italian seasoning, to taste
In frying pan, melt butter. Add onions and cook until caramelized. Add garlic for last few minutes. Place onions and garlic in bottom of slow cooker. Salt and pepper roast. In frying pan, brown the roast on all sides. In the meantime, add peppers to slow cooker. Add au jus packets, plus water called for on packets. Add Italian seasoning. Stir together. Add roast. Secure lid. Cook on high 6 hours. Slice beef and return to slow cooker. Cook on low an additional 30 minutes to an hour. Serve on sandwiches.
*We like to eat these on onion rolls, but Kaiser rolls will work, too.
This recipe is from my childhood. The original recipe calls for simmering it on the stovetop and only uses 1 green pepper and 1 onion. To cook on the stovetop, use a large pan with a lid. Simmer over medium heat, covered, for about 3 hours, slice and return to pan to simmer for an additional 30 minutes before serving.
