This recipe is the reason why I buy a bird much larger than we can eat for Thanksgiving. The ingredients for this recipe are approximate. This casserole also tastes great when made with chicken breasts.
Thanksgiving Leftovers Casserole
- 4 cups turkey (torn into bite-sized pieces)
- 1 can jellied cranberry sauce
- 1/4 cup mayonnaise
- 3 cups mashed potatoes
- 1 cup gravy
- 3 cups prepared stuffing
Preheat oven to 375*. Grease a 13×9 baking dish (I like to put down foil and grease the foil with coconut oil).
In small bowl, beat together cranberry sauce and mayonnaise until mostly smooth. Set aside.
In another bowl, mix together mashed potatoes and 1/3 cup gravy. Set aside.
Press turkey in an even layer across the bottom. Spread cranberry sauce mixture on top of turkey. Spread mashed potatoes in a layer on top of cranberry sauce. Spread remaining gravy across potatoes. Finally, spread stuffing on top.
Bake in oven for 35-45 minutes (until heated through). Enjoy.
We’re having a late dinner tonight. Our Thanksgiving Leftovers Casserole is in the oven now. My family looks forward to this casserole every year. Possibly even more than Thanksgiving dinner itself.
