Brats & Potatoes Bake #recipe

Last night, I was wanting to cook something easy for dinner. We had a package of Johnsonville smoked brats and a bag of frozen O’Brian potatoes. I’ve done the whole sausage and potatoes thing a zillion times. I wanted something different, so I made this.


1 pkg Johnsonville smoked brats, sliced
1 bag frozen O’Brian potatoes
1 cup spinach (I used the frozen chopped spinach)
2 tbsp coconut oil
2 tbsp butter
2-4 tsp blackened seasoning (use as much or as little as you like)
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1/2 tsp pepper
1/4 tsp cumin
1/4 cup Parmesan
1 cup shredded mozzarella


Preheat oven to 400*. Line a 13×9 pan with foil. Set aside.

In large bowl stir together the brats, potatoes, and spinach. Set aside.

In microwave safe bowl melt the butter and coconut oil together. Add all the seasonings to the melted butter.Add the butter mixture, Parmesan, and mozzarella to the potatoes. Stir to combine. *don’t be alarmed if your butter mixture hardens when it hits the frozen potatoes, this is because of the coconut oil

Spread your mixture into your prepared pan. Cover with foil. Bake for 1 hour in 400* oven, stirring about halfway through the cooking time.
