After the Meatball Soup, I was looking for something chocolatey. I love no bake cookies, and have discovered that apples and chocolate actually go hand in hand. It surprised me how good they taste together. These no bake cookies are delicious and healthy.
1/4 cup (1/2 stick) butter
1/4 cup coconut oil (you can use all butter if you prefer)
2 cups sugar
3 tbsp cocoa powder
1 cup apple, diced (peels on)
1 tsp cinnamon
1/4 tsp salt
1 tsp vanilla extract
3 cups quick cooking oats
1 cup of nuts (sadly I was out of nuts so this batch didn’t get any)
In small saucepan, melt together butter and coconut oil. Stir in sugar, cocoa powder, apples, cinnamon, and salt. Bring to a boil. Boil for about a minute. Remove from heat.
Immediately stir in the vanilla extract. Fold in the oats and nuts. Drop by tablespoon onto waxed paper lined cookie sheet (I was out of waxed paper so I used plastic plates and it worked pretty well).
Refrigerate until set (about an hour). Transfer to an air tight container and store in the fridge. These no bake cookies always go fast around my house.
